Yellow Diamond SL28 was sourced from Central Valley, Costa Rica, and was grown at the Las Lajas farm. Las Lajas has developed an awesome reputation within the specialty coffee community over the last 10 years. Owned and operated by the Chacón family, third-generation farmers in the San José Province, Las Lajas is the base for over 80 years of coffee farming history. The name Las Lajas originates from the Spanish version of an Arabic word referring to indigenous-crafted stone artifacts that were found on the farm. The 38-hectare farm is divided into several parcels, each with various shade tree species and unique micro-climates, allowing for diverse coffee processing methods, including natural, honey, and washed.
Yellow Diamond SL28 Costa Rica underwent an experimental processing method called Yellow Diamond processing. Yellow Diamond processing is similar to a typical honey processing method, in which the coffee cherry is only partially removed before fermentation and drying. What makes this experimental process different and unique is all in the way it was dried. Las Lajas has perfected an extremely slow drying process within a very tightly controlled temperature range. This leaves us with more sugars during fermentation, a brighter acidity, and a cleaner cup.
