Creativa Coffee District (CCD) is a group of creatives set to spark collaboration in the industry by weaving coffee together with worlds of art and coffee, creating a colorful tapestry of installations and cup profiles. Our partners at Equation Coffee started this project in 2018.
Collaborating producers bring their beautifully ripe cherries to CCD’s mill, and the work begins. First, they look for average Brix levels of 18° or higher and a pH above 4.5. After this, cherries are assigned to one of the four fermentation styles.
This lot underwent 76 hours of anaerobic fermentation before being set to dry on the patio. Two layers of shade mesh guard the carefully drying cherry against the harsh sun, one layer underneath and one 10cm above, which helps extend the drying period up to 20 days. CCD has a dry mill facility to guarantee that high-quality standards are upheld and the processing creativity shines in the final cup. Once the coffee is hulled, and the cherry skins are successfully removed, it is sorted by density and size. Next, the coffee is sorted by color. All coffees pass through a manual selection phase, and CCD enlists the help of the local indigenous community, the Ngäbe-Buglé, to oversee this critical process.
Since this is a decaf offering, it underwent additional processing before being packed for export. Green beans are soaked in water for 10 hours in small batches to remove the caffeine, which results in 99.9% caffeine-free coffee. The final cup packs a fruitiness we’ve never seen in decaf coffee.
