“Lack no coffee nor peace, in your house” is the motto of Sookoo Coffee. Founded in late 2018 by Ture Waji and his brother Assefa, Sookoo is a family owned company that produces and exports organic specialty and traceable coffee in the high altitudes and semi-forest of Guji, located in the South of the Oromia Mountains of Ethiopia.
Guji is home to the top award-winning national and International Ethiopian specialty coffees, and coffees from it are known for their distinct flavor profiles. Natural processed coffees are often known for their fermented, ‘boozy’, wine-like characteristics. However, when naturals are done just right, the lines between fermentation science and agricultural craft become blurred into what we could call…Magic. Guji Magic, that is.
This year is our first year working with Ture and Sookoo via our partners at Osito Coffee, and we couldn’t be more excited to share this very special offering with you. The lot that we purchased from Ture is a natural processed lot of Serto 74112. Serto 74112 is a small and compact variety with origins in the Metu-Bishari forest that was released in 1979 by the Jimma Agricultural Research Center (JARC) for both its yield potential and disease resistance to coffee berry disease.
In a cup of Guji Magic, you’ll experience a sparkling acidity akin to champagne and lemon zest, the floral brightness of bergamot and lime, the smooth body of white tea, and the sweetness of berries. Guji Magic is one of the most floral, clean naturals that we’ve ever tasted, and each mug will leave you wishing for more. When you taste Guji Magic, it becomes crystal-clear why it was given its name–it is magical.
But what sets Guji Magic’s natural process apart from others? After receiving cherries from the Bookkisa kebele, the cherries are all dried at a centralized location on raised beds at an elevation of 2173 masl for around 15-20 days in very thin layers. They are moved and rotated frequently to ensure even and precise drying. The results of all of this effort are some of the most vibrant and pristinely clean coffee we have sampled. Unlike many naturals, they present with high florality and acid with very little booziness, allowing the coffee to speak for itself. As our partners at Osito coffee tell us, Sookoo’s coffees are often described as “Ethiopia first, natural processing second,” and it totally makes sense once you try this Magic.
