I personally am super excited for this coffee, as this region is one of my favorites. Why are coffees from Ethiopia so delicious? Ethiopian washed coffees tend to be elegant, complex, floral, and citrusy. These flavors taste tea-like, which is my jam. Inspired by the Wisconsin state flower, the Wood Violet, Violet Ethiopia embodies the ineffability of the transition from spring to summer. Faysel A. Yonis was born into a coffee producing family and enjoyed the rich traditions of Ethiopian coffee culture at a young age. He fervently recalls the coffee tree looming over their front yard and the daily coffee ceremonies performed by his mother. Faysel started to harbor an interest in the coffee market in the late ‘90s. He became a representative of coffee farmers by introducing and channeling their coffee to the local market. A decade of experience gave Faysel enough confidence to start his own company: Testi Trading PLC. With the help of Trabocca, we were able to source coffee from Testi.
This particular coffee is from the Bishan Dimo washing station in Denbi Uddo, Guji, which is run by Faysel’s brother, Hakime Yonis. Faysel and Hakime have plans to purchase the lands of neighbors so that they can install more drying beds and ensure that parchment and cherries can be more spread and evenly dried. The Bishan Dimo site itself is surrounded by 800+ smallholder families. This washed offering from Bishan Dimo was processed using a washed method, and the beans were fermented for 24-48 hours in cement tanks. The parchment was then dried for 10 to 12 days.
