WHAT THE BARISTAS ARE DRINKING

We specifically asked for this one.

Tart Pom Ethiopia was a barista and customer favorite back in 2023, so when this year’s lot came around, we booked it based on memory and gave the sample a very happy yes. Somehow, it got even better: cleaner, more expressive, and loaded with lovely fruit.

It was harvested in February, processed in March, hit the water in May, and landed in Milwaukee in August. Then we gave it a little rest while we tinkered with the roast.

We’re keeping it light to let that tart acidity do its thing, with enough development to bring the sweetness into balance. Look for juicy pomegranate, bright blood orange, and tangy red rhubarb.

A VERY GOOD PROBLEM

Nano Genji exists because great coffee created a good problem. Its sister washing station, Nano Challa, earned significant premiums for quality, attracting more farmers until membership outgrew the mill. So in 2019, the cooperative expanded.

Just a few miles away, they built Nano Genji with new Penagos processing equipment and dozens of drying beds, giving more producers access without sacrificing the standards that put this community on the map.

Today, 630 members work across the two washing stations in Ethiopia’s coveted Agaro region. Through sourcing partner Red Fox Coffee Merchants’ relationship with the Kata Muduga cooperative union, dating back to 2009, we get access to some remarkable coffees. This lot stood out as a delicious example of what thoughtful growth can taste like.

OUR APPROACH TO THIS COFFEE

Jes roasted Tart Pom light, highlighting its florals, bright citrus, and tart rhubarb, while giving it enough development to bring sweet red berries into the cup. Because this high-altitude coffee is denser than average, we found it does well with a slightly coarser grind. Brew it as a V60 for a more expressive, juicy cup, or reach for the drip brewer with a medium grind for something smoother, with more florals and red fruit. Start exploring around 7 days off roast, with peak freshness and flavor around 11 days. Then keep brewing; it’s fun to see what changes as the coffee settles in.

Whole Bean

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
