Chosen by Jes at origin, it comes from the deep family traditions of Los Santos, bringing generations of knowledge into a cup that feels anything but ordinary.

It’s fruit-forward, syrupy-sweet, and delightfully unexpected, the kind of coffee that makes you wonder how all that flavor got in there. After more than three months of intentional rest, we’re roasting it light to bring the producer’s work into sharp focus. Natty Cat is back, and our Reserve lineup is better for it.

EVERY CHOICE CHANGES THE CUP

Natty Cat is the result of many good decisions. Iván Gerardo Solís Rivera has spent more than 20 years working across the coffee industry, and in 2018, his family took that experience a step further by building their own micromill and dry mill. That control lets them follow a coffee closely from farm to finished green.

For Natty Cat, Iván chose Red Catuai and took the ambitious route: a natural process that demands careful cherry selection and precise drying. Grown high in the mountains, the coffee matures slowly, building sweetness before harvest. Fully ripe cherries were hand-selected, density-sorted, and patiently dried on patios. Jes tasted this lot at origin and knew it was something special; one of those coffees where every choice adds up to a cup worth sharing.

OUR APPROACH TO THIS COFFEE

Kelly roasted Natty Cat light to highlight its bright, expressive fruit while giving it enough development to round out the body. Brew it as a pourover for the full experience: a round, syrupy body with notes of cherry, mango, nectarine, oolong, and cream. Prefer a drip brewer? Grind it medium-coarse, and you’ll get a mellower cup with cacao, cranberry, and jasmine taking the lead. This coffee rewards patience, too. The fruit starts showing up around day 5, then gets sweeter and more expressive with rest, peaking around day 14. Brew it throughout that window to see how the cup changes.

Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
