This lot, composed of Red and Yellow Caturra varieties, continues the estate's legacy of hiring an all-women harvest team. By specifically selecting this group to pick this lot, Martha champions their financial independence, a mission that has directly transformed the lives of women and their families. The Art of the Process

The vibrant profile of this coffee is the result of an intricate, two-step anaerobic natural process. After selective harvesting, the cherries underwent a 36-hour fermentation in sealed steel tanks. They were then dried to a specific humidity level and rested in Grainpro bags to continue their transformation in a dark room. This meticulous cycle was carefully repeated to develop the coffee's incredible depth and fruit complexity. To create the ultimate expression of this harvest, we selected two distinct lots from this process, one chosen for its creamy banana pudding notes, and another for its bright, punchy guava, and blended them together, resulting in a juicy, balanced cup with layers of banana cream, guava, and papaya.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
