This vibrant decaf blend showcases the full spectrum of flavors from Colombia's diverse coffee regions. Sourced from smallholder producers in northern Huila, it is a distinctive blend of Castillo, Caturra, Colombia, Caturron, Geisha, Java Pink, and Bourbon varieties, grown at altitudes of 1,500–2,000 meters. True to our farm-to-cup ethos, every step from processing to decaffeination is completed in Colombia, honoring the producers and preserving quality at origin. The coffee is crafted using a unique 60-hour fermentation process, followed by a two-stage drying method. The final decaffeination uses a gentle, natural ethyl acetate derived from sugarcane, meticulously preserving the coffee's inherent clarity, sweetness, and complex flavor.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
