DECAFFEINATED AT THE SOURCE

Most decaf coffee travels halfway around the world before the caffeine is removed. This fresh-crop Colombia takes a different path. After milling in Popayán, it's decaffeinated nearby at Descafecol in Manizales, the only major decaffeination facility in South America. Using a natural sugarcane decaffeination and fresh water from a volcano, caffeine gets removed gently while preserving the coffee's natural sweetness and character, reducing the carbon footprint of moving coffee across continents for processing.

Sourced through our import partner, Cofinet, this lot comes from 75 smallholder farmers who received up to a 20% quality premium for exceptional coffee. We're roasting it light to preserve the high-elevation brightness and sweetness that the sugarcane process enhances, bringing forward notes of caramel, vanilla, and malt. With fresh arrivals landing in June and again in early August, this offering stays remarkably fresh from beginning to end.

Sugarcane Decaf, Redefined

What makes this decaf different? It starts with the process, and where that process happens. Seventy-five growers in Cauca's high-altitude Popayán region harvest fully ripe Castillo, Caturra, and Colombia cherries, then depulp, wash, and carefully sun-dry them on raised beds for 5-7 days. What follows is a natural sugarcane decaffeination using spring water from a volcano and fermented sugarcane compounds to gently dissolve caffeine over eight hours, preserving the bean's structure and amplifying sweetness. By keeping these steps, milling, drying, and decaffeination, at origin, this approach builds local infrastructure, creates skilled jobs, and strengthens regional expertise. That origin-led model aligns directly with our values as a certified B Corp. This lot stood out to us because it defies every decaf stereotype: a traceable, high-quality origin with genuine character and a supply chain that invests in the communities behind it. 

FROM THE CUPPING TABLE

Kelly and Jes knew this coffee's dense structure could support a light roast, preserving its creamy body while allowing its natural brightness to shine. In profiling, the goal was to find the roast that best balanced weight, sweetness, and lift. The result is a cup with a velvety caramel body, lively citric and malic acidity, and remarkable clarity. Push it darker, and that conversation disappears.

We've been enjoying it across several brew methods. On an automatic brewer, it reminds us of toffee, cookies and cream, and a quiet kind of sweetness that keeps us reaching for another sip. On a V60, the cup opens up with more texture and sparkle, bringing milk chocolate-dipped candied orange peel, vanilla cream, and a finish that feels clean rather than heavy.

We love this coffee fresh, but if you can wait a few days, do. It settles in beautifully, reaching its sweetest, most complete expression about 7-14 days off roast.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
