This exceptional lot comes from Finca Buena Vista, tended by Edwin Zambrano in the Algeciras region of Huila. Edwin is a man of few words but immense action, working alongside his mother, Nora, and brother, Rafael, to uphold a family legacy steeped in coffee. A true community leader, Edwin shares his resources and knowledge with neighboring producers, offering drying services and transportation to help elevate the region as a whole. Farming at altitudes between 1,700 and 2,000 meters above sea level, he utilizes sustainable practices and resilient varieties like Colombia to combat climate change. For Edwin, seeing his fields in bloom is a majestic reward for his dedication to quality and cooperation.

The Processing: Anaerobic Natural

To create this vibrant, limited-edition microlot, Edwin meticulously selected ripe Colombia cherries and sealed them in tanks for a 120-hour anaerobic fermentation. This controlled, oxygen-deprived environment allows the fruit to develop intensely complex, tropical flavors without the harshness often associated with wild ferments. Following this extended maceration, the coffee was moved to patios for 3 to 4 days of sun-drying, then finished with 40 hours in mechanical silos to stabilize the moisture and ensure a clean, consistent cup. The result is a juicy, bright cup delivering a precise flavor profile of cascara, tamarind, and black grape, showcasing the pinnacle of modern Huila coffee craftsmanship.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
