A FIRST FOR STONE CREEK

At origin we cupped at least 50 coffees, hoping to find something that would surprise us.

This just-landed Costa Rica is our first time offering the Catigua variety, and it immediately stood out. A hybrid of Timor, known for its hardiness and disease resistance, and Yellow Catuai, prized for its sweetness and cup quality, Catigua was developed to bring together the best of both worlds. Jes, our Director of Roasting, selected this coffee during a visit to the farm and mill, drawn to its massive juiciness, bright citrus character, and clean, balanced finish.

Chosen as a type sample in March and arriving fresh from origin, it offers a firsthand look at why producers are excited about Catigua. Jes roasted this bright and light to highlight its natural vibrancy. This coffee bursts with notes of cascara, lime peel, and blood orange.

ROOTED IN CURIOUSITY

For more than a century, the family behind this coffee has been growing crops at the foot of Costa Rica's Poás Volcano. What began as a sugarcane farm evolved into coffee production in the 1970s, and since 1999, a father-son team has pushed the boundaries of what coffee can be. Today, they're known for pioneering experimental processing methods and cultivating innovative hybrid varieties, all powered by 100% renewable hydroelectric energy.

That spirit of curiosity is more important than ever. Faced with increasingly unpredictable weather and growing disease pressure from climate change, the farm works closely with agronomists to scientifically test planting strategies and evaluate new hybrids. This natural-process lot is one result of that ongoing learning: a coffee designed to thrive in changing conditions while delivering the juicy body and bright citrus character that first caught our attention.

OUR APPROACH TO THIS COFFEE

Jes and Kelly developed a light roast that lets Lime Shake-Up's naturally bright citrus and delicate sweetness stay front and center. Roast it any further, and those qualities begin to fade. Sometimes the best decision is knowing when to stop.

After testing multiple V60 recipes, we found the sweet spot, revealing juicy lime, tart cherry, and blood orange with a clean, refreshing finish. On an automatic drip brewer, a slightly coarser grind produces a fuller body, bringing forward milk chocolate, broiled cherry and graham cracker sweetness alongside bright pops of lime. Like many of our favorite coffees, this one rewards patience. Give it 7-12 days off roast, when the fruit becomes sweeter, brighter, and beautifully integrated.

Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
