In the misty highlands of Papua New Guinea's Waghi Valley, a network of smallholder families tends to their modest plots of about 1.5 hectares where Arusha, Bourbon, and Typica coffee trees grow alongside food crops for the community. At elevations reaching 1900 meters, the cool air slows cherry maturation, building the dense structure and complex sugars that define this lot. With farms too small to process individually, the harvest is brought together at central washing stations, a communal effort that unites the region's character into a single, luminous cup.

The Craft of the Community

At the cooperatively owned washing stations where this coffee comes together, precision is a shared responsibility. Cherries are depulped the same day they are picked, then fermented for 24–48 hours before being washed clean of mucilage. This meticulous process, handed down and honed collectively, highlights the bean's natural brightness while creating the syrupy, full-bodied mouthfeel that makes this coffee so distinctive. Dried slowly on raised beds under the highlands' sun, Cacao Sunrise is an invitation to sit at the table with the families who cultivated it, sip by sip, a toast to the many hands that bring forth notes of dark chocolate, ripe peach, and sugar berry.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
