The story of Las Lajas begins in 1840, when grandfather Nicolás Chacón first acquired the land, a heritage passed down through generations. Facing the coffee crisis of the 1990s, the family refused to surrender, instead pioneering their own micromill to preserve quality and tradition. Today, the farm cultivates exotic varieties like San Isidro 48, Geisha, and SL-28, alongside classic Caturra and Catuai. This ultra-bright, full-bodied coffee undergoes Las Lajas’ signature Black Diamond Anaerobic Natural method, a meticulous, sun-drenched alchemy. After floating and electronic sorting, the cherries ferment anaerobically, intensifying their fruit-forward profile. They then dry for 22–30 days on raised beds, absorbing the lush tropical climate. After drying, the beans rest for 60+ days, allowing flavors to mature into a dazzling spectrum: juicy cherry, tart limeade, and deep pomegranate. How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
