What happens when everything stays the same, except the way a coffee is processed? This project was created as an educational exploration of fermentation with Lucia Solis, a microbiologist and winemaker whose work focuses on using fermentation to develop flavor. Working alongside producers around the world, Lucia has helped redefine the way we think about fermentation, not as a shortcut to intensity, but as one of many creative decisions that shape a coffee’s final expression.
For this experiment, one coffee was processed four different ways using controlled fermentation methods. The farm, harvest, variety, altitude, and roast profile remain consistent, allowing one key question to take center stage:

How fresh is your coffee?
Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
