Here, smallholder farmers deliver their Caturra and Cataui cherries to the Palmichal Mill, a hub for quality and fairness. The mill's methodical washed process begins with careful cherry selection, followed by fermentation and washing that preserves the beans' inherent brightness while developing their clean, structured profile. How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
