WE SUMMONED THIS ONE EARLY

We prebooked Watermelon Specter in February, before the coffee was even grown. It landed fresh in Milwaukee this August, just in time for us to start thinking about Halloween candy. At the farm, five days of co-fermentation with watermelon and yeast give the coffee its juicy, candy-like character before it moves through a honey process. We’re roasting it light to preserve the delicate aromatics from fermentation and let the fruit-forward character stay in focus. The result is bright, sweet, and nostalgic, with the unmistakable flavor of watermelon candy, the kind you hope to find in your Halloween haul. We’ve been waiting months to see what this coffee would become. Now it’s here, transformed and ready to haunt the season.

A COFFEE BUILT FOR CURIOSITY

At Stone Creek, we think coffee is at its best when it gives you something to discover. Watermelon Specter was created with that same sense of curiosity. Forest Coffee is experimenting with what’s possible through co-fermentation, using yeast and watermelon to transform Caturra and Colombia cherries into something far outside the traditional coffee flavor spectrum. For us, that makes this more than a novelty; it’s a chance to explore the boundaries of specialty coffee alongside the producers who are pushing them. We prebooked this lot before it was even grown because we wanted to see where this experiment would take us. It’s playful by design, serious in its craft, and exactly the kind of coffee we love sharing at Stone Creek. The result is a conversation piece in a cup.

OUR APPROACH TO THIS COFFEE

After tasting our samples, we found the sweetest, most expressive version was also one of the lightest. So Kelly kept the roast light and let this coffee taste as much like candy as possible. On a pourover, expect straight-up watermelon Jolly Rancher energy: juicy, bright, and seriously sweet. A drip brewer brings more caramel and chocolate into the mix while keeping that pop of watermelon acidity.

This coffee gets sweeter as it degasses, with 4-14 days off roast being the sweet spot for peak flavor. And when the coffee’s gone, the reusable tin can stick around as a home for brew tools, kitchen herbs, loose tea, or whatever small treasures need a place.

What grind should I choose for my brewing method?
Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
