Originally developed in Kenya, the legendary SL-28 variety finds a remarkable expression in Costa Rica's volcanic soils, grown by one of the country's pioneers of Natural processing. It's a combination of variety, producer, and process you'll rarely find on another roaster's menu.

FROM FARM TO ROAST

Some of the most remarkable coffees begin with a bold decision. When coffee prices collapsed in 1999, Alberto Guardia chose not to sell at a loss. Instead, he built Hacienda Sonora's own mill, helping pioneer Costa Rica's Natural processing movement and redefining what was possible through process. More than a century after the family first began stewarding this land, Hacienda Sonora now cultivates over 20 coffee varieties, including this celebrated Kenyan-developed SL-28. Harvested in February, the coffee arrived at Stone Creek in late June, where we gave it another month to rest before roasting. Jes roasted it light with meticulous control to maximize its sweetness while preserving the vibrant, juicy acidity the producer worked so carefully to create. The result is a coffee that reflects remarkable decisions from farm to roast.

OUR APPROACH TO THIS COFFEE

We roasted this coffee light to highlight its vibrant acidity, floral character, and evolving fruit. Because this coffee changes noticeably with brew method and time off roast, we encourage you to explore it a few different ways.

On drip: Expect a bolder, more tart cup, with notes of hibiscus, lemon peel, and Campari. We brewed it at a medium-coarse grind.

On V60: Go coarse for a sweeter, more balanced experience. The floral hibiscus remains, while the acidity shifts from lemon peel to lemonade. The cup becomes rounder and syrupy.

  • Final Brew Time: 2:15–2:45

The fruit really starts to pop around day 6 off roast, with its fullest expression developing around days 10-20. Try it, then revisit it as it evolves.

What grind should I choose for my brewing method?
Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

Flat filter grind is a medium grind with a consistency like sea salt, ideal for flat-bottom drip brewers, promoting even extraction and producing a balanced, smooth cup of coffee.

Chemex or Kalita

Chemex grind is a medium-coarse grind, similar to coarse sand, designed to ensure a slower extraction and clean, bright cup with pronounced clarity and delicate flavors.

French Press or Clever

French press grind is a coarse grind, with a texture like breadcrumbs or coarse sea salt, allowing for full immersion brewing and producing a rich, full-bodied cup with minimal sediment.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
