WE’VE BEEN THINKING ABOUT THIS ONE FOR MONTHS

When we first tasted Violet Surge Colombia, we were blown away. The cup was clean, bright, and impossible to forget, but we didn’t have a spot for it. So we asked our producer to save us a future harvest. Months later, it finally made its way to Milwaukee.

The coffee left Colombia in mid-September and arrived in early October, giving our roasting team just enough time to rest, tinker, and get to know it before launch. We’re roasting it light to bring forward its vibrant purple-fruit character and lactic acidity, while giving the honey-like sweetness and silky body room to shine. The result is a juicy, deeply sweet cup with bright acidity, creamy tang, and plenty of personality.

Available for a limited time.

WE LIKE KNOWING WHAT MAKES A COFFEE TICK

By the time this coffee reached our roastery in Milwaukee, it had already been through a pretty thoughtful process. Héctor Fabio Meneses grows Cenicafé 1 and Castillo at La Virginia in northern Huila, where mountain conditions help the cherries develop slowly and evenly.

Then he gets to work. The cherries ferment for 14 hours in whole cherry and another 30 hours in mucilage before being washed and carefully dried. Those processing choices gave us plenty to get curious about.

We love coffees that give us something to dig into, and this one delivers. The result is a clean, structured cup with bright acidity, layered sweetness, and a smooth body; a little piece of Huila we were excited to bring home to Milwaukee.

OUR APPROACH TO THIS COFFEE

Kelly roasted Violet Surge light to let its bright, fruit-forward character shine. Brewed as a V60 pour over, it brings lemon, black plum, and lactic acidity together with a creamy texture. Run it through a drip brewer, and you’ll find chocolate-covered plum, a clean finish, and a tart lemon kick. Every brew method brings something different to the cup, so experiment and see what stands out to you. For peak freshness and flavor, enjoy Violet Surge 3–14 days off roast, with day 7 hitting its stride.

What grind should I choose for my brewing method?
Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

Flat filter grind is a medium grind with a consistency like sea salt, ideal for flat-bottom drip brewers, promoting even extraction and producing a balanced, smooth cup of coffee.

Chemex or Kalita

Chemex grind is a medium-coarse grind, similar to coarse sand, designed to ensure a slower extraction and clean, bright cup with pronounced clarity and delicate flavors.

French Press or Clever

French press grind is a coarse grind, with a texture like breadcrumbs or coarse sea salt, allowing for full immersion brewing and producing a rich, full-bodied cup with minimal sediment.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
