We heard a rumor of a beast with a taste for the extraordinary, and we found its haunt in Papua New Guinea’s Western Highlands. This is where generational farmers cultivate heirloom beans under a dense, mysterious canopy, a world away from Wisconsin but just as shrouded in mist and myth. The Kindeng Mill gathers these beans from the Waghi Valley, a place of dramatic slopes and cool air where coffee develops a wild, untamed potential. It’s the perfect origin for a legendary creature, offering a unique, fruity spirit destined for a dark transformation.

Summoning the Hodag required a dark ritual. We took these uniquely wild beans and applied a beyond-dark roast, not to destroy their character, but to unleash their darker soul. The result is a brew as dense and smoky as a forest bonfire, with a formidable body that stomps across your palate. Dominant notes of cacao nib and bonfire smoke capture its fearsome exterior. But the Hodag is clever, hiding a surprising heart, a ghostly, sweet trace of pineapple candy that echoes from its natural process, a fleeting glimpse of the spirit within the beast. How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
