A producer with over 35 years of experience, Gloria grew up among coffee trees and has meticulously renewed her farm with disease-resistant varieties like Castillo. Her dedication to quality, supported by her family, has now been recognized on the national stage, and this lot represents the pinnacle of her craft.

This award-winning coffee undergoes a meticulous washed process to ensure its celebrated clarity. The journey involves harvesting only ripe cherries, a hydraulic selection before pulping, and a crucial 32-hour central fermentation stage that develops complexity. The coffee is then washed with clean water before being dried carefully in parabolic solar dryers. This precision results in a brilliantly clean cup with high brightness and a soft body, offering a captivating symphony of tart Granny Smith apple, sweet caramel chew, and floral rose hips that define this standout coffee.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
