BLACK HONEY PROCESSING: A CUSTOMER FAVORITE

Some coffees become summer traditions. Bright, juicy, and honey-sweet, this returning customer favorite comes from Marvin Barrantes' Finca Reina Elizabeth in Costa Rica. Black Honey processing is celebrated for its syrupy sweetness, and after cupping 70 coffees at origin, Jes, our Director of Roasting, chose this lot as the standout. Marvin's vertically integrated operation makes this labor-intensive process possible, resulting in a beautifully clear cup with notes of black grape, nectarine, and honey.

Available for a limited time.

The Farm & The Story

Marvin Barrantes named his 8-hectare farm, Finca Reina Elizabeth, after his mother, Doña Elisa Alfaro Hidalgo. The locals of San Luis de Grecia called her "Reina Elizabeth" for her striking blue eyes and queen-like kindness, a legacy Marvin honors by meticulously cultivating single-variety lots on divided plots. This lot features the Sarchimor varietal, while Caturra, Geisha, and others grow separately on the same farm. Located in Costa Rica's Central Valley at 1450-1550 masl, Marvin represents a new generation of producers who prioritize traceability and quality. Since establishing his own milling operation in 2012, he has moved beyond delivering cherry to cooperative mills. By controlling every variable from flowering to finished parchment, Marvin enables the intensive processing that transforms good coffee into an exceptional small-batch offering.

The Process & The Cup

Honey processing is expensive and labor-intensive, but Marvin's vertically integrated model makes it possible, because his fields sit just steps from his own wet mill. Cherry is selectively handpicked by Marvin and his family, then pulped on his ecopulpers. Rather than washing off the mucilage, Marvin lays the parchment and sticky fruit layer onto drying beds for approximately 20 days. This Black Honey method infuses the bean with the fruit's sugars, resulting in a balanced body and pronounced brightness. After drying, Marvin transports the parchment to Hacienda Sonora for dry milling and export. The light roast preserves delicate notes of black grape, nectarine, and honey, delivering a vibrant cup that showcases why Costa Rica's micro-mill revolution has become a world standard for traceability and sustainability. This is a small-batch, single-origin returning favorite.

What grind should I choose for my brewing method?
Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

Flat filter grind is a medium grind with a consistency like sea salt, ideal for flat-bottom drip brewers, promoting even extraction and producing a balanced, smooth cup of coffee.

Chemex or Kalita

Chemex grind is a medium-coarse grind, similar to coarse sand, designed to ensure a slower extraction and clean, bright cup with pronounced clarity and delicate flavors.

French Press or Clever

French press grind is a coarse grind, with a texture like breadcrumbs or coarse sea salt, allowing for full immersion brewing and producing a rich, full-bodied cup with minimal sediment.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
