This lot represents a collaboration of farmers dedicated to their craft, harvesting cherries at peak ripeness to ensure optimal flavor development. The beans are then carefully processed using the full natural method, spread on raised beds under the sun. Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
