The Origin: Farm & Process

Sourced from the Bellavista farm, nestled between 1800-2100 meters in the Acevedo region of Huila, this coffee is born in the clouds. The high altitude forces the cherries to develop slowly, concentrating their complex sugars and vibrant acids. The cherries, a blend of Castillo and Colombia varieties, are transformed through a Natural Extended Fermentation. This intricate process begins with floating the cherries for quality, followed by a period of tank fermentation before slow sun-drying. The result is a raw bean bursting with intense, fruity potential, setting the stage for a truly vibrant cup.

Roastery to Cup

We roast this coffee light to perfectly balance its electric character. A light roast preserves the dazzling fruit notes teased out by the natural process while ensuring a smooth, drinkable body. In the cup, expect a bright and juicy explosion. The initial notes of sweet muscadine grape are quickly followed by a pop of sour gummies, all tied together with a clean, floral finish of hibiscus. It’s a wild, sweet-tart sensation that is as bright and lively as a bolt of pink lightning.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
