We roasted Mango Nectar Colombia to amplify its vibrant brightness and juicy body, revealing layers of red plum, tangerine, and sweet floral notes. Grown at 1,730 meters on Luis Alejandro Ortega's farm, this Colombia variety reflects the high-altitude terroir of La Estrella. The meticulous washed process and careful handcrafting yield a luminous, expressive cup. This limited reserve celebrates our second year working with Luis and the relationship we've built around his unwavering commitment to quality.

La Estrella: Legacy, Care, and Craft

Luis Alejandro Ortega Guerrero, a second-generation coffee producer from San Agustín, Huila, carries forward his family's legacy at La Estrella alongside five of his seven siblings. Together with his wife, Marta Jenny Bolaños, and their two sons, he cultivates exceptional coffee across 11 hectares, balancing production with stewardship. Eight hectares are planted with varieties including Caturra, Castillo, Bourbon, Gesha, and Colombia, while preserved forestland protects native biodiversity and a natural spring.

At 1,730 meters in the La Estrella micro-region, cherries ripen slowly in ideal conditions. This Colombia microlot was handpicked at peak maturity, depulped, dry-fermented for 24 hours, hand-washed, and carefully dried for 30 days. During a visit, our founder Eric Resch witnessed Luis’s hands-on dedication firsthand: a commitment to quality and sustainability that shines through in every cup.

HOW WE'RE EXPERIENCING THIS: BREWING TIPS

We roasted this coffee lightly to highlight its natural balance of brightness and sweetness. Early cups showcase sweet florals and juicy yellow stone fruit, creating a vibrant and expressive profile. As the coffee rests, those flavors continue to evolve—becoming sweeter and more tropical, with peak complexity arriving around two weeks off roast.

Because this high-altitude coffee is especially dense, we found it performs best with a slightly coarser grind than usual. For V60 brewing, we recommend a coarser grind, minimal agitation, and an extraction time of about three minutes. If your brew runs significantly longer, coarsen the grind further. While delicious fresh, the coffee continues to open up over time, rewarding patience with increasingly layered sweetness and tropical fruit character.

Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

Flat filter grind is a medium grind with a consistency like sea salt, ideal for flat-bottom drip brewers, promoting even extraction and producing a balanced, smooth cup of coffee.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
