WHEN THE COFFEE’S THIS GOOD, WE MOVE FAST

Giant Peach Ethiopia didn’t take the long way to Milwaukee. This 2026 harvest traveled directly from the port to our Milwaukee roastery, skipping warehouse delays and arriving just months after being picked and processed. That means we get to experience this natural-process coffee while its fresh-crop character is still front and center.

Great coffee starts with great relationships. Tsegay Hagos Tesfaye has built lasting connections with smallholder farmers, supporting them through the hard seasons and earning their best cherries in return.

We’re keeping the roast light to preserve this high-altitude coffee’s delicate complexity, bringing out a vibrant, juicy cup with a silky body, bright acidity, and a long, fruit-forward finish.

12 oz bags are available for a limited time.

THE KIND OF COFFEE WE CHASE

We tasted this lot and immediately started talking about it. Not just because it was packed with fruit, but because there was so much behind the cup.

Tsegay Hagos Tesfaye built Sasaba to work directly with experienced local farmers, paying premiums for exceptional cherries and investing in training. He also oversees the coffee from farm to export, giving him control over quality at every step. The result is a natural-process coffee with serious depth, sweetness, and character.

That’s what caught our attention. We wanted to preserve all of it, so we’re keeping the roast light and letting the coffee lead. Slow-dried for 15-20 days on African raised beds, this lot develops the vibrant fruit, juicy sweetness, and silky body that made us want to bring it home to Milwaukee.

OUR APPROACH TO THIS COFFEE

Kelly roasted Giant Peach light, aiming to bring out the bright, tangy stone fruit that makes this Ethiopia stand out. And when it comes to brewing, we found that a little experimentation goes a long way. On the V60, expect juicy peach, pineapple, and candied orange peel, all wrapped up in a sweet, balanced cup. Switch to a drip brewer, and you’ll get a whole different experience: peach aroma, round body, cacao complexity, and a hint of orange peel on the finish.

Our biggest tip? Give this coffee some time. Giant Peach really opens up with rest, and even at seven days off roast, it can still taste a little tight. We recommend brewing it around 10–14+ days off roast to let those flavors shine.

What grind should I choose for my brewing method?
Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

Flat filter grind is a medium grind with a consistency like sea salt, ideal for flat-bottom drip brewers, promoting even extraction and producing a balanced, smooth cup of coffee.

Chemex or Kalita

Chemex grind is a medium-coarse grind, similar to coarse sand, designed to ensure a slower extraction and clean, bright cup with pronounced clarity and delicate flavors.

French Press or Clever

French press grind is a coarse grind, with a texture like breadcrumbs or coarse sea salt, allowing for full immersion brewing and producing a rich, full-bodied cup with minimal sediment.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
