The short answer: coffee does not “expire” in the way milk or bread does, but freshness matters if you want the best-tasting brew.

How Long Do Coffee Beans Last?

That said, coffee brewed within a couple of days from the roast date will generally be a bit harsh and carry with it a touch of toasty flavor similar to popcorn. That flavor goes away as the coffee settles and “degasses” - a phenomenon where coffee releases CO2 following roasting. The bulk of degassing happens in the first week after roasting.
