THE FARM & PROCESS

Kiwi Ambrosia Colombia begins on Norbey Quimbayo’s La Esmeralda farm in the high-altitude hills of Huila, Colombia. With a unique microclimate and rich soil, Norbey cultivates over 10 coffee varieties, each thriving under his meticulous care. Among them, Sidra stands out for its intense sweetness and fruit-forward profile—a reflection of both the farm’s terroir and Norbey’s dedication to excellence. To distinguish his coffee in a region known for quality, Norbey embraces innovation, ensuring each harvest is truly exceptional.

The semi-washed Sidra undergoes a precise fermentation process to enhance its vibrant character. Cherries—selected at 70% ripe, 20% overripe, and 10% half-ripe—are floated for purity before 12 hours of aerobic and acetic fermentation unlocks their lively acidity. A second 24-hour lactic fermentation in water deepens complexity, followed by two weeks of sun-drying to achieve the perfect moisture balance. Resting in GrainPro bags further refines the flavors before milling.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
