Nestled in Costa Rica’s Central Valley, Hacienda Sonora has been a pioneer in specialty coffee for over a century. Stone Creek Coffee has been sourcing from this farm for the past 4 years. Managed by Alberto Guardia and later his son Diego, the farm is renowned for innovation, cultivating 20+ coffee varieties across 100 hectares. When coffee prices plummeted in the 1990s, Alberto invested in quality, becoming an early adopter of honey and natural processing, methods that define Sonora’s distinct profile. The SL28 variety thrives here, prized for its drought resistance and complex flavors. Grown at 1,300 masl, these cherries are handpicked, float-separated, and dried with care, preserving their inherent fruitiness. Today, Hacienda Sonora stands as a beacon of craft and experimentation, where tradition and bold innovation yield some of Costa Rica’s most exciting coffees!

THE CUP & PROCESS

This natural-processed SL28 from Hacienda Sonora is a celebration of balance, intensity, and vibrant structure. After selective harvesting, the cherries are pulped, retaining all their sticky mucilage for a deep, wine-like fermentation. They sun-dry for nine days on patios, rest, then finish in low-temperature mechanical dryers, ensuring even development without scorching. The process locks in the coffee cherry’s essence, delivering a full-bodied, bright cup where nectarine jam and wildflower honey meet the bold, sun-drenched flavors of dried apricot and cranberry. The natural sweetness is balanced by a juicy acidity, creating a coffee that feels both luxuriously rich and electrifyingly bright. How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
