Crafted by the Alvarado Fonseca family at their Corazón de Jesús Micro-Mill, this coffee hails from El Salitre, a farm nestled in Pérez Zeledón’s highlands at 1,300 masl. Since 2015, the family has dedicated itself to perfecting small-lot specialty coffee. The Catuai cherries are handpicked at peak ripeness, floated to remove defects, then fermented whole in shaded polypropylene bags for two days to intensify sweetness. Drying begins on cement patios for 10 days with minimal disruption, followed by 15 days on raised beds, a technique pioneered in Africa to ensure even airflow. This patient approach preserves the coffee’s lively fruit notes while gradually reducing moisture to ideal levels. The outcome is a dynamic natural with remarkable clarity: no funk, just pure tropical vibrancy.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
