Deep in the mountains of the Guji Zone, within the Oromia region of Ethiopia, lies the humble yet mighty Guji Coffee Export PLC. Owned and operated by Girma Edema, this farm has quite the reputation for providing coffees that have made their place into many cafes across the United States. Girma has over 20 years of experience cultivating and exporting the coffees harvested in the Oromia region.
The beans are harvested from around the Oromia region and brought to the Guji Coffee Export PLC where the beans are dried on raised beds and rotated frequently to increase air circulation, reduce damage, and allow a more consistent drying process. Once processed, the beans are then sent to the mill for decaffeination. This specific process is known as “swiss water decaf,” which only uses “water, temperature, and time to gently remove caffeine.” No chemicals are added, helping to preserve many of the original flavor notes from cultivation and fermentation in the bean.
