This blend begins with a foundation of Castillo, Caturra, and Colombia varieties from the mountainous Huila region of Colombia. Grown by a dedicated group of farmers who share a communal milling process, these beans are meticulously washed, resulting in a crisp and clean flavor profile.
To enhance the body, we’ve added a component from Nicaragua. Sourced from the Jinotega region at elevations up to 1,400 meters above sea level, this blend of Caturra, Catimor, Catuai, and Parainema varieties is expertly washed, contributing a rich caramel depth to the cup.
The final touch is a light-roasted Natural Chiroso from Tolima, Colombia, sourced from Jorge Elias Vásquez at Finca La Roca. This rare heirloom varietal is celebrated for its distinctive spicy, cardamom-like qualities, tropical fruit tones, and delicate floral nuances.
The result is a beautifully balanced cup, featuring the sticky sweetness of toffee, the bright acidity of lemon peel, and the ripe fruitiness of tart cherry.
