Dona Francisca Chacon and her husband’s families have been farming coffee for over three generations. In fact, her husband, Oscar Chacon’s family started the Las Lajas project all the way back in 1840. It wasn’t until 1936 that they planted their first coffee plants though. However, it wasn’t until 2006 that Francisca and Oscar decided to begin milling their own coffee in a risky effort to make their operations more profitable. Francisca and Oscar’s passion for and skill at both farming and milling coffees is evident in a cup of their coffee, as well as in the success of their business. We are proud to be able to offer you this red honey processed lot of coffee from Las Lajas. In a mug of Scarlet, you’ll experience a viscous, creamy body paired with the fruit juiciness of passion fruit and blueberries.
This particular lot of coffee from Las Lajas underwent a red honey process. After this coffee was hand-picked, it was separated for floaters, then pulped to leave on some of the mucilage. It was then dried for several days. By leaving some of the mucilage on the coffee while it dried, more rich fermentation was able to be facilitated. As a result, the robust and fruity flavors you taste in this coffee were able to develop. That’s what is so remarkable about this particular honey process coffee. Although it is juicy and fruity, it is also incredibly clean.
