Akin to the recent natural processing movement in winemaking, the natural coffee processing movement elevates the final cup. Harnessing the power of fermentation is the key, and Marcela Castellanos was a true master at it. This particular lot of coffee from Marcela is the last that she produced before passing away, and we feel profoundly moved to be able to offer it. To those that knew her, Marcela was not only a great coffee producer, but also did an incredible job at sharing her knowledge and skills with compassion.
Brought to you via our partners at Cofinet, this particular lot from the Castellanos’ Finca Cristales is 100% Wush Wush variety, and was processed using a natural method. Wush Wush shares a phenotype with the Gesha variety, and is among one of the most interesting varietals that we’ve tasted. Wush Wush is named after the town Wush Wush in Ethiopia where the variety comes from. Not only does Wush Wush taste interesting, but it’s also an incredibly rare variety. With its delicate, yet paradoxically robust floral and fruity flavors, it would be no surprise at all if in the years to come, Wush Wush will have it’s moment in the spotlight, as has Gesha. With offerings such as this one, perhaps that time has already arrived.
Though Marcela’s husband continues her legacy on their farm, Marcela will not be forgotten. Enjoy a mug of this unforgettable offering, brought to you from an unforgettable woman.
