Coming from the same producer as the cinnamon co-fermentation part of the delicious Cinnamon Blackberry Gesha, this coffee features another work of art from a partner we treasure and are constantly watching for more interesting crops and co-ferments. Jairo Arcila is the mastermind at work here and we are thankful for his mad scientist experiments.
Jairo is a third generation coffee farmer from Quindío, Colombia. He brings his family history of excellent coffee farming and ties it in with his love for experimentation and learning. His two children have also carried on the family tradition by co-founding Cofinet, one of Colombia’s leading exporting businesses. We have relied on Cofinet to bring us some of the best, and most unique coffees that Colombia has to offer, including the one you are about to drink.
We have really been taken by the idea of co-fermentation. This is the cutting edge of coffee processing and requires utilization of both skill and science. This coffee was fermented with strawberries and wine yeast, bringing some seriously fruity notes to the party, and pairing well with acidity already inherent within these cherries. The lot is then dried and shipped to us to play around with even more.
As you grab your cup today, think not only about the care that was put into the cultivation of this reserve, but also the big brains it took to create this special and unique style of coffee. Drink up, and taste the big fruit in the cup.
