Akin to the recent natural processing movement in winemaking, the natural coffee processing movement elevates the final cup. Harnessing the power of fermentation is the key, and Nectario Zuñiga is a true master at it. This lot of coffee from Nectario’s farm, El Altico (‘The Attic’), was processed using a lactic natural method and highlights the luxurious flavors brought out by this processing method. With tropical notes of papaya paired with the juiciness of lemon and nectarine, and notes of black tea, Restoration tastes like a tropical Arnold Palmer.
We named this offering from Nectario Restoration in order to celebrate not only the arrival of spring, but also the restoration of Nectario’s farmland. Originally from Cauca, Colombia, Nectario lost his land due to violence years ago. Thanks to a Colombian government program, Nectario’s land was restored, and he improves his practices and processing methods each day. Our partners at Cofinet helped us source this coffee from Nectario directly, and we’re excited to share the fruits of his labor.
