In this innovative method, the coffee cherries are fermented in sealed, pressurized tanks that are deprived of oxygen, creating unique acids that result in a one-of-a-kind flavor profile. With the cherries left intact during fermentation, the beans also soak up the sweet sugars from the fruit, yielding vibrant and exciting tasting notes.
At the heart of La Ventolera is Felipe Trujillo, a lifelong learner and true innovator in specialty coffee. Felipe embraced his passion for coffee by joining his father in managing their family farm. Drawing inspiration from the wine industry, he mastered fermentation techniques and transformed La Ventolera into a regional hub for specialty coffee. Today, Felipe not only produces outstanding coffee but also teaches young farmers the art and science of coffee processing.

Jorge Rojas experienced a life-changing moment at the age of 12 after the loss of his father. Stepping up to work alongside his mother on the family farm, Jorge’s dream was clear: to craft premium, high-end specialty coffee. Jorge pursued this dream of crafting coffee that could stand among the best. Through his dedication and his partnership with the ASOPEP Planadas Association, he embraced sustainable, eco-friendly farming practices and earned an organic BIO certification, distinguishing himself as one of the few producers of premium organic specialty coffee.
Jorge’s coffees are a vibrant tapestry of flavors—some bold and process-driven, others more delicate, highlighting the beauty of the land and variety. For this lot, a short, fermented natural process allowed the coffee’s natural brilliance to shine through. Jorge’s goal was to enhance the vibrant fruitiness without overshadowing the coffee’s purity, resulting in a clean, bright Chiroso that lets the variety’s essence take center stage.
