Similar to winemaking, the natural coffee processing movement truly elevates the final cup. Harnessing the power of fermentation is the key, and Felipe Arcila is a master at it. In a mug of 200 Hour Supernatural, you’ll experience a medium body reminiscent of a natural processed Garnacha wine paired with a deep fruitiness akin to fruit snacks, notes of Cacao nib, and the juiciness of watermelon and lime. This micro-lot is 100% Castillo variety.
In the five years since Felipe started Cofinet, the exporting company we purchased this offering directly from, his brand has risen to meteoric success abroad in specialty coffee markets the world over. We’re delighted to be able to offer coffee cultivated by such a pioneer in the industry. Grown by Felipe at his farm, Jardines del Eden (Gardens of Eden), this coffee was exposed to an anaerobic fermentation of 150 hours, placed inside GrainPro bags maintaining a temperature below 22 degrees Celsius by placing the coffee inside a water tank. Then, the coffee was placed on raised beds until it reached 18% moisture content. Afterward, the coffee was placed inside GrainPro bags again for 50 hours and later left to dry below 40 degrees Celsius on raised beds until 10.5% moisture was achieved.
It is the second year we are offering this limited run Reserve coffee. We think 200 Hour Supernatural is so nice that you just had to try it twice. Do your taste buds a flavor and grab this stunning coffee before it sells out.
