What’s sweet, creamy, and jam-packed with milk chocolatey goodness? Brew a mug of Prism and find out. This lot is brought to us via Prisma Coffee in Guatemala from the Juarez family farm, Guatalón, and it’s packed with dynamic notes of caramel, brown sugar, lemon curd, and hazelnut. Guatalón is part of the El Guatalón Estates, integrated by five coffee plots: La Loma, El Cuje, La Buganvilia, El Pajuil, and Guatalón. The first one belongs to Jalapa department and the others are located in Santa Rosa department, in the municipality of Santa Rosa de Lima. Altogether it represents 75 hectares in total, 40% of which is coffee, and 60% is forest.
The paternal grandfather, Daniel Juarez (1883-1976), established the first commercial coffee plantation in this region in 1910 in the village of Belén, Santa Rosa de Lima, using the genetic materials Typica and Mundo Novo. In the next generation only their father, Juan Alberto Juarez Reyes (1929-2012), took the decision to grow coffee commercially, establishing his plantation in El Cuje plot by the mid-70s, in an area of 4 hectares. On this location, he planted the varieties Pache San Ramon and Catuai. Guillermo has done a terrific job making the farm sustainable with a great balance between production and quality. Willy, Guillermo’s son has become a valuable addition to the farm as an agricultural enterprise, He has put a lot of effort on the organization of the lots, traceability, and quality. Willy is eager now to experiment with new processes, but we selected this washed lot, as we felt it represented some of the best we’d tasted from Guatemala this year. After the coffee underwent a washed process, removing and washing away the skin and mucilage from the outside of the coffee beans with the help of water, it was dried on patios.
