Two of the reasons we look to Chiapas for coffee are the quality of harvesting in the region, and the quality topography to support coffee growth. Chiapas is a fairly mountainous region where many coffee farmers in the area are committed to ethically and sustainably grown coffee. This is a region where growing with organic and fair trade certifications is not uncommon. While there are pros and cons to each of these certifications, they’re generally good signs of a strong ecosystem around the coffee and solid monetary impact on the local economy.
This coffee comes from a young producer out of Chiapas, Mexico named Vitali Solis. We have both partnered with Equation Coffee to bring this very special coffee to you. Vitali is a father of four and an agronomist by profession. This profession has given Vitali a step up in the coffee trade as it has given him a deep understanding of the soil and how it interacts with the coffee he grows on his coffee plantation.
Vitali has worked for other larger coffee companies as a field harvester. After some time he decided to bring himself back to pick up what his father started. Inheriting several plots from his father, Vitali has been carefully cultivating coffees that are known on a global scale. This specific small batch is a washed coffee that brings out notes of caramel, like pecan pie, and a light pear toned effervescence, like a crisp cold peach cider.
