From various farms in the Popayán region in western Colombia, this incredible coffee has been sourced and milled locally and sent to us via our friends at Cofinet. The Popayán region is known for its ideal topography. Sitting at a comfortable 1700 masl, this is the perfect place to grow delicious coffee.
This region is a bit of a plateau and is known to locals as Meseta de Popayán. In the shadow of the Andes mountains, this area constantly pumps out high quality coffee due to the climate and its position above sea level. Coffee prefers a nutrient dense soil, and appropriate moisture levels at different times of year. With an average rainfall of 170cm-200cm this region gets the perfect amount of hydration to encourage healthy growth for many varieties of coffee. This proper hydration and microclimate brings us a nicely balanced cup with rich caramel undertones and soft floral top notes.
Following processing, this lot achieved decaffeination through the EA (ethyl acetate) decaffeination process. This mode of decaffeination helps preserve a lot of the coffee’s positive flavor characteristics, especially when compared to the methylene chloride method of decaffeination, which we rarely see in specialty coffees.
Chocolate Sangria Decaf Colombia is here to serve as a tasty cup that can keep you drinking throughout the afternoon with the warmth and softness to act as a nightcap of sorts. With many decafs in our history struggling to bring the flavor and dynamics, this coffee is a step above the rest, bringing decaf in its elevated form.
