Today, La Ventolera is renowned for specialty coffee, with Felipe sharing his passion for coffee crafting and educating young farmers on the art and science of coffee production.
The Black Honey that is featured in this coffee is a processing method that involves leaving an increased amount of the mucilage (or honey) on the coffee cherry during fermentation and drying. This process allows the cherry to absorb more of the sweet, fruit flavors. The darker the honey, the more meticulous the process (and the more ‘honey’ that is left intact). Black honey-processed coffees require constant monitoring to prevent over-fermentation and mold. They also have a higher potential to lose freshness, so the green coffee should be roasted promptly to preserve the sweet honey flavors.
