Farm to Cup Story
The story of specialty coffee ultimately begins in Ethiopia over ten centuries ago. It was there that the Arabica plant was discovered, and since then, its seeds have been spread throughout the tropics. The cultivation of the Arabica plant has persisted within Ethiopia, and coffees of heirloom varietals which grew centuries ago still grow there today. This presents us with an incredibly rich and deep connection to the past through coffee. With notes of lemon, lime, and green tea, paired with a viscous, creamy body, The Fox strikes a beautiful balance.
The Fox is brought to you from Sidamo, an area of Ethiopia that is renowned for its delicious heirloom varietals of coffee. Today, various small land holders came together to produce this mixed variety lot which was grown at a range of 1850-2100 masl—one of the contributing factors in the complexity of this coffee. Processing in Ethiopia is standardized and detailed, much in thanks to the wealth of knowledge that has been passed down and developed for centuries. After harvest, the lot in The Fox was meticulously processed using a washed method with a 36-72 hour fermentation time, and then sun-dried for up to 12 days.
