Farm to Cup Story
We can’t all fly, but we can drink coffee. We’ve brought you this delicious offering from Colombia to help give your day flight. In a cup of Pegasus, you’ll taste sweet citrus notes of sweet lemon paired with floral aromatics, and rounded out by a smooth, black tea-like body.
This lot of Colombian coffee was brought to us with the help of Polaris Specialty Coffee from a group of farmers in San Lorenzo, Nariño, Colombia called the Associated Farmers of Terra Coffee. “Las Yeguas” was the name of the estate where the municipality of San Lorenzo was founded, initially property of the Spanish colonizers of the time. “Las Yegaus” translates to “The Mares." This municipality is unique for its location on a plateau 2,030 masl. The inhabitants of San Lorenzo consider themselves a coffee growing community as 70% of the population is actively farming coffee in small lots. This particular lot is Caturra and Colombia that was processed using a washed method, and then sun dried on raised beds.
