Established in 1888, Beneficio San Diego is considered one of the most modern mills in Costa Rica. The mill specializes in coffees from the Tarrazú and Tres Ríos regions and takes pride in continuously increasing their standards while ensuring good community relations with producers and sustainable production practices. This lot of coffee was honey processed to bring out a deep, rich sweetness. In a cup of Honey Costa Rica, you’ll experience the complex sweetness of blackberries and honey, a viscous, full body, and the citric acidity of lime.
Upon arrival at the mill, this coffee was processed using the honey process, which originates in Costa Rica. During this process, some or all of the mucilage of the coffee cherry (also known as ‘honey’) that coats the parchment of the beans is left on during the drying stage. This provides the coffee with a sweetness that resembles a naturally processed coffee by allowing the natural sugars to enhance the coffee’s sweetness. The coffee was dried on African beds or patios, which helps slow down the drying process. It ensures that the coffee is dried more evenly, providing even more consistency in the process, which in turn translates to a clean, sweet cup.
