This Brazilian coffee is sourced from the Dutra Estate in São João do Manhuaçu, Brazil. It is a blend of Catuai, Mundo Novo, Catuacai, Pacamara and Icatu varieties that were processed using a semi-washed method. Since semi-washed processing removes the skin of the coffee cherry but leaves the mucilage of the coffee cherry on during processing, it gives the coffee a dynamic, rich sweetness. Medium roasting this lot helped to make it even sweeter, while rounding out its full body.
