This Week’s CoCo: Prepare for your Work
For some people, work is something that is kept divided from the rest of our lives. For the most part, this is a fine thing. In the same way we try to put a pause on our personal stuff when working, so as to work the best we can, we also want to put a pause on our work stuff, so as to enjoy our time apart from work. While I agree that we should do this, I want to suggest that we take some time to prepare for our work. Why? Because an ounce of prevention is worth a pound of cure. What I mean by this is simple: To best enjoy your work – and life – some planning – an ounce of prevention – is needed. This can be in the form of creating a weekly personal schedule of your shifts, setting up pathways for your P&P goals, checking in with your work mentor, or simply knowing how much sleep you need to operate well and planning your night to get to bed on time.
All of these things help accomplish making your job easier by preventing problems from starting. Think of this process as preventative maintenance. It is far easier to upkeep a car with routine maintenance than to run it to the ground and buy a new one. In the same way, by preventing these issues, you escape the “pound of care” needed to write the wrongs. This then lends to a better time outside of work because you are not stressing about unforeseen issues and problems left unsolved. All of these benefits come from simple steps of preparation that help us prepare better to crush it in our jobs.
Next Week’s CoCo: Speak Up
Speaking up often feels hard, partly because it feels like it forces us to the spotlight. It also can carry a connotation of negativity. When one speaks up, it is a knee-jerk reaction to assume that they are unhappy with something and want change. These assumptions are not emptily founded, but they do not have to be the reason someone speaks up. When speaking up, it is important to know that it can be done with support, positivity, and excitement. For this reflection, I want to focus on these three thoughts in an effort to encourage everyone to speak up in these ways.
First off, speaking up can be done with support. When speaking up, it is important to remember that your opinion matters and that you have the support to be heard by your mentors and leaders. Also, you are very often not alone. If something is bothering you or is wrong, there are good odds that others see it as well. When detecting something that warrants a speak up, share your findings respectfully with your peers and see if they find the same thing. Then, together, you can speak up, supported by your peers. Next, speaking up can be done in a positive way. Speaking up isn’t always done when things are wrong, but rather when further improvements can happen, or recognitions are warranted. An example for this is speaking up about getting more awesome stickers to hand out to children, or shouting out exceptional work done by your coworkers. These speak ups bring joy to our lives and work! Lastly, speaking up can and should be exciting at times. One example I have of exciting speak ups is when one of my baristas speak up about wanting to pursue career advancements by becoming a master barista or spec ops certified. These are exciting steps and are important speak ups to have.
All of this isn’t to say that speaking up won’t ever be hard, but it doesn’t always have to be hard. Going forward through these two weeks, I encourage you to find speak ups in your cafe and work environment that are reminiscent of the three highlighted attributes and SPEAK UP!

She is amazing at knowing what needs to get done at what times and what days. She is also great at keeping others on task. Speak Up: This Core Commitment Hero comes from our Downer Kitchen Team – Tanner M! He is always ready to communicate challenging situations, ask insightful questions, and actively seek out gaps in our processes. By doing so, he consistently #speaks-up with thoughtful suggestions on how we can improve and move forward in our day-to-day operations. His proactive approach and dedication to finding solutions inspire everyone around him to do their best!

- Upcoming Projects – New Website & Bag Size Change: In the coming months, we are working on a new website and a packaging transition. For the updated packaging, the sizes we’ll be offering are: sample bag (for the coffees we currently have it offered for), 12oz, 2lb, & 5lb. We will start this transition online first, then will move to cafe shortly after. At that time, employees will get a free 12oz bag weekly (excludes Reserve) instead of the current 1lb, since 1lb bags will be eliminated. We will also be changing the benefit to extent to part-time employees (instead of 1/2lb weekly) so everyone will get the same weekly bean amount. - Decaf Cream City Espresso Parameters Update: With the recent composition update, here are the new dial-in parameters for Decaf Cream City.
- In: 18.8-19.2 grams
- Out: 39-43 grams
- Time: 29-34 seconds
- Espresso Pulling Tips From Education Team: Remember that the grind size will directly affect your brew ratio and extraction time. If you’re using a coarser grind (resulting in a larger ratio of coffee to water), aim for a shorter extraction time. If you’re using a finer grind (resulting in a smaller ratio of coffee to water), aim for a longer extraction time. Light roasts, like Jasmine Mist, require mindful adjustments to avoid under- or over-extraction. While this isn’t a one-size-fits-all rule, it’s a great starting point if you’re having trouble dialing in your shot!
