Creativa Coffee District (CCD) is a group of creatives set to spark collaboration in the industry by weaving coffee together with worlds of art and coffee, creating colorful cup profiles. Our partners at Equation Coffee started this project in 2018. Producers bring ripe cherries to CCD’s mill, and the work begins. First, they look for average Brix levels of 18° or higher and a pH above 4.5. After this, cherries are assigned to one of four fermentation styles. Each one is carefully crafted to suit each lot, bringing their unique characteristics to the forefront, setting the stage for works of art to form in the roastery and the cup.
Starting with our caffeinated friend, Intrinsic Cherry Panama underwent 48 hours of aerobic fermentation in open plastic circular tanks. It’s CCD’s homage to the classic natural cup profile. Juicy and sweet, Intrinsic Cherry lots are brimming with bright fruit notes, a round body, and a critical acidity. With this fermentation style, the inner value of each lot is valued, showcasing nature’s potential. After the cherries have undergone their respective processes, they are set to dry on the patio. It’s not only the largest patio in Panama but also one that carries an immensely layered and cultural story. Panama’s natural environment is scorching hot around harvest time. In the summer, the patio can reach up to 56°Celsius. Two layers of shade mesh are used to guard the carefully drying cherry against the harsh sun, one layer underneath and one 10cm above. This helps extend the drying period up to 20 days until a moisture level of 20% is reached.
And our decaf counterpart, Static Cherry Decaf Panama underwent 76 hours of anaerobic fermentation before being set to dry on the patio. Two layers of shade mesh guard the carefully drying cherry against the harsh sun, one layer underneath and one 10cm above, which helps extend the drying period up to 20 days.
Once both of these coffees were hulled and the cherry skins are successfully removed, it is sorted by density and size. Next, the coffee is sorted by color, an additional step towards a quality export. Then the coffee is ready for the last step. All coffees pass through a manual selection phase before being packaged for export. CCD enlists the help of the local indigenous community, the Ngäbe-Buglé, to oversee this critical process.
And since this Static Cherry is a decaf offering, it underwent additional processing before being packed for export. Green beans are soaked in water for 10 hours in small batches to remove the caffeine, which results in 99.9% caffeine-free coffee.
Both of these coffees are brimming with fruity notes. Sweet and fruity, Intrinsic Cherry has a round body, and a sparkling acidity.
