Unicornucopia is brought to you from the OCCICAFE Cooperative in San Vicente, Colombia via our partners at Cofinet. Colombia’s average annual coffee production is 11.5 million bags (that’s the third highest in the world, followed behind Brazil and Vietnam) so they know a thing or two about growing delicious coffee. Roasted medium, Unicornucopia highlights flavors that the region it is from are well known for.
OCCICAFE is a coop that has been focused on improving their quality since 2015. Cofinet has worked with OCCICAFE since 2018, and in that time, has not only improved their quality, but has also begun exploring other processing methods. This particular lot from OCCICAFE is composed of 50% Castillo, 20% Caturra, and 30% Colombia varietals from the small-holder farmers that comprise OCCICAFE. It underwent a washed process, fully removing the skin and mucilage from the coffee cherries before drying. In the cup, it is clear that the producers at OCCICAFE are no novices at washed processing.
