If you’ve tried them, it’s no secret that our Gluten Friendly Peanut Butter Cookies are some of the best around. Like puffy clouds of peanut butter goodness, these cookies pair perfectly with a mug of hot coffee on a chilly fall day. And since we love cookies *almost* as much as we love coffee, we’ve decided to share our recipe for this peanut butter delicacy with you to celebrate.

Stone Creek Bakery Gluten-Friendly Peanut Butter Cookies
Ingredients
- 1 standard size jar of peanut butter (446g)
- 168g sugar
- 177g brown sugar
- 32g baking soda
- 5g vanilla extract
- 2 large eggs
- Maldon salt for topping (or any other salt you’d like)
Instructions with Mixer:
- Beat peanut butter, sugar, brown sugar, and baking soda on low speed until incorporated.
- Add vanilla and eggs. Mix on 1st speed until mixture is a uniform color/texture.
- Scoop as big or small as you like. (In the SCC Bakery, we use a green scoop – 100g each!)
- Flatten slightly on your greased sheet tray, and sprinkle with Maldon or other large flaky salt that you like.
- Bake at 350°F in your home oven for approximately 12-14 minutes. The edges should start to turn a bit darker, and the middles should remain pale.
- Remove from the oven and cool before storing.
- Enjoy with your favorite mug of Stone Creek Coffee!
Hand Mix Instructions:
- Beat eggs, brown sugar, and white sugar to ribbon stage.
- Add peanut butter and baking soda. Fold in with a spatula until the batter is homogenous and has stiffened enough to scoop.
- Scoop 2 inches apart on baking sheet, top with a sprinkle of flaky sea salt.
- Bake at 350°F in your home oven for approximately 12-14 minutes. The edges will golden brown and the centers pale.
- Remove from oven to cool before storing.
