In the past few weeks working as Stone Creek Coffee's intern, I've become a little coffee-obsessed. I've always loved it, but lately, I've wanted to go beyond my traditional two cups in the morning and use it for something more...creative. Last week, I suggested the marinade recipe that I found, but I think this week's recipe tops even that delicious suggestion! How about Espresso Brownies?
They're super easy to make. All you need is:
- 1c. sugar
- 1/4 tsp. salt
- 1 1/2 sticks of butter
- 1 tsp. vanilla
- 4 oz. chopped semi-sweet chocolate
- 3 eggs
- 1 c. flour
- 1 finely ground
tablespoon of your favorite dark-roasted coffee (how about our French Roast or our Dark Guatemala?)
Here's how to make them: Heat the sugar, salt, and butter in a sauce pan. Then, add the vanilla and chocolate and stir until it's well melted. Then add the coffee!
Stir the mixture well and transfer it to a mixing bowl. When it's slightly cool, fold in the eggs and flour, and pour the mixture into a baking pan. Bake for about 30 min.
I'm going to serve mine under vanilla ice cream! I think it's the perfect summery way to enjoy this treat!
